We didn’t know it then, but Nickel Cat Bread Company began in 2011 when our head baker (Rich) made his first loaf of naturally leavened bread. Twelve years later after baking countless loaves for his family and friends, Rich finally decided that those who had been telling him he should sell his bread were right! In April of 2023, Nickel Cat Bread Co. became a licensed Cottage Food Operation, and in May the first loaves were sold (to the same friends and family!)
All of the breads @ Nickel Cat are naturally leavened by our wild yeast starter named Ginny (short for Amgine.) We source the best, organic flours and whole wheat berries from Central Milling. All of the whole wheat flours in our breads are milled here in our kitchen with a Komo mill. Slow fermentation allows for the maximum development of complex flavors from the starter and flours.
As of today, we bake all of our breads to order for pick up on our front porch in Redwood City, CA.
